Phytases (myo-inositol 1,2,3,4,5,6-hexakisphosphate phosphohydrolase) belongs to a special group of phosphatases which can hydrolyse phytate (myo-inositol 1,2,3,4,5,6-hexafcisphosphate, IP6) to inositol phosphates, inorganic phosphorus, and myo-inositol [1].
