I have a few others, too. And yet, this knife is *sharp*. I used to work in catering and restaurants, so I'm aware that because of the wear and tear we don't use the best things - just enough to get the job done.
This knife, however, is exceeding my expectations. It is light, agile, durable. From day one it felt naturally like my right hand, like it's always been there.
It is an amazing value, especially for home use. It's at that price point where, because it is so good, it's absolutely worth it, but that in three or four years, you won't mind replacing it. It's a beautiful knife, so it can stay on display. It's magnetic, so it can be put on a magnetic knife strip.
I bought one for my grandmother, too. I go to her house all summer to grill - and I need a knife that feels like it's a part of me!
If you don't want to spend the money on a fleet of premium knives, this one seems like it will do the same job at a lower price point. I've not had it that long, but if this review is not updated from its 5-star rating, I still have it and it is going strong.
By the by, It's sharp. It cuts onions very, very well. Sails through tomatoes, bell and jalapeno peppers, minces parsley fantastically (much less sticking to the side than the Grand Prix II), cuts cooked chicken flesh (coq au vin) around the bone beautifully. I am thinking about replacing some of my older knives with this guy - and for me, that's saying a lot!

We have a drawer full of knives we rarely use and then we have this one that lives on the counter cutting board (always with edge facing away). Turns out that we (and I expect most folks) don't want or need a collection of knives, we just want to cut things as we prepare food. This blade style and size works great for a wide variety of kitchen cutting chores and it's very rare we pull out another knife, like maybe the slicer on Thanksgiving, this gets used for everything else.
The handle is excellent because it provides such a confident grip, even with wet or greasy hands. This is its top safety feature in my opinion. A rosewood handle or fancy showroom handle just can't perform like this one can. The shape, texture, and material all work together to make it really comfortable and make your grip confident. I don't think I've ever lost grip of this knife, which of course would be dangerous, especially with the dogs lurking below the counter looking for something to drop.
The blade material is excellent, holds an edge well, I hone it with a Mac-brand smooth black borosilicate honing rod and that keeps it cutting nicely between sharpenings which it probably only gets once a year or so. It cleans up well, the Granton "scallops" probably do something but I can't clearly tell, maybe make slices of potato or something resist sticking to the blade, but it's not night-and-day or anything against a smooth blade.
Anyway, a very satisfactory knife and if it ever wears out (doubt it) we'll get another just like it. Definitely an excellent choice for the permanent resident of your counter cutting board.

I will admit it has more than three and all are pretty virtuous. Why didn't I buy this earlier? We do a lot of cooking. We rarely use any form of canned food, so food prep is a big thing in this household. However, none of our knives could get really sharp, nor keep that sharp edge for long.
This is different. It is razor sharp out of the box.It is still that sharp although other knives would show signs of dulling by now. It goes through hard carrots as if they were cucumbers. Cuts are far cleaner, smoother, edges of the cut veggies are sharp.
It may look cheap from a distance because of he plastic handle. However, on closer inspection, one can feel it has that Magpul like texture, and the steel blade is well formed and polished. It is light for its size, and is very sharp.
I have touched up the blade a few times. It is far easier to deal with than special snowflake ceramic knives. Steel is a lot tougher and this steel gets sharper than ceramic. It is even sharper than our Kershaw and Victorinox pocket knives. That says a lot.

I absolutely love it!!! I'd been using an 8" Cold Steel chef's knife previously, and this is so much more comfortable and light for normal everyday food prep. The blade is sharp out of the box and maintains an edge nicely with basic steeling. I'll still use a heftier chef's knife for heavy chopping, but this is my go to for most veggies and slicing meats. The handle is very very comfortable as well - Fibrox is my favourite for non-slip & easy clean and the size fits my hand nicely (may be too small if you have huge hands). Absolutely love this knife!
