Gluten-free, dairy-free for my friends with sensitivities!   Full recipe below 👇🏼 or comment RECIPE and I’ll send it straight to you! 🔗 I hope you enjoy this healthy chicken salad as much as I do!   INGREDIENTS • 4 cups rotisserie chicken chopped or shredded, or cooked chicken of choice (I live near a @sprouts and love using their rotisserie chicken for this!) • ¼ cup sun-dried tomatoes, chopped • ¼ cup red onion, chopped • 1 cup baby spinach, chopped • ¼ cup kalamata olives, chopped • 2 tablespoons extra virgin olive oil • ¼ cup fresh lemon juice (1 large lemon or 2 small lemons) • ½ teaspoon garlic powder • salt & black pepper to taste (will depend on how seasoned your chicken is!)   DIRECTIONS • Chop or shred your chicken. Finely chop the sun-dried tomatoes, red onion, kalamata olives, and spinach. Add everything to a large bowl with the chicken. • Top with olive oil, lemon juice, garlic powder, salt & pepper. Toss or stir to combine. Give it a taste and adjust the seasoning as needed. • Hint: If you prefer a more moist chicken salad, add more olive oil or lemon juice. If you like a creamy chicken salad, feel free to add some plain Greek yogurt to make it creamy!   Dietitian Tip 👉🏼 It seems basic, but it’s so easy to forget that when it comes to sticking with healthy eating, having lunches like this easy chicken salad meal prepped and ready to go is so helpful. Especially on busy days. Full recipe below.👇🏼For my pro tips comment RECIPE & I’ll send you the link.   Ingredients: •4 cups shredded chicken •2 stalks celery, finely chopped about ½ cup •4 stalks green onion, finely chopped •1 cup Greek yogurt  •⅓ cup Buffalo sauce, I use @primalkitchenfoods brand •½ large lemon, juiced •1 teaspoon garlic powder •½ teaspoon paprika •¼ teaspoon salt more to taste •¼ teaspoon black pepper Directions 1. Shred your chicken using either 2 forks or a hand mixer. Chop the celery and green onions. 2. In a large bowl, combine the shredded chicken, Greek yogurt, and buffalo hot sauce. Give it a good stir. Add the celery, green onions, lemon juice, seasonings, and salt and pepper and stir to combine.  3. Hint: if you like things spicy, add more buffalo sauce and cut back on the amount of Greek yogurt!   Dietitian Tip 👉🏼 It seems basic, but it’s so easy to forget that when it comes to sticking with healthy eating, having easy lunches like chicken salad meal prepped and ready to go is so helpful.
