I’ve been making this on repeat for dinner parties so the recipe below serves 12-14 people or so. Divide in half for a smaller group. 800ml heavy cream 400g good quality dark chocolate, finely chopped 80g granulated sugar 6 large eggs, separated Flaky salt Whip 400ml heavy cream to soft peaks. Cover and chill. Add chocolate to a large, heat-proof bowl. Mix remaining 400ml heavy cream, 40g sugar and egg yolks and heat gently over medium-low heat until steaming, stirring constantly. Pour cream mixture over chocolate, cover and let sit for 2 minutes. Stir gently until smooth. (If you stir too much, the mixture could split. I like to use an immersion blender if that happens.)
