I’m typically the animal that takes the spoon straight to the jar of peanut butter, but this is my new sweet treat obsession, and it justttttt so happens to be vegan and sort of healthy!! 😮‍💨 Chocolate Peanut Butter Oat Bars 2 tablespoons olive oil 3 cups rolled oats 1 cup dried cranberries 1 cup roughly chopped pecans 1 cup maple syrup 1 cup creamy peanut butter 1 teaspoon kosher salt 1 teaspoon ground cinnamon 12 ounces (2 cups) dark chocolate chips 1 teaspoon coconut oil Flaky sea salt, for garnish 1. Line a 9-inch square baking pan with parchment paper, leaving overhang on all sides. 2. In a large skillet, heat the olive oil over medium-high heat. Add the oats and cook, stirring constantly, until lightly golden, about 3 minutes. Transfer to a large bowl with the cranberries and pecans. 3. To the skillet, add the maple syrup, peanut butter, salt, and cinnamon. Whisk constantly for 1 minute until smooth and bubbling. Pour over the oat mixture and stir to combine. 4. Transfer the oat mixture to the prepared baking pan and spread in an even layer. In a medium heatproof bowl, melt the chocolate chips and coconut oil in the microwave or over a double boiler. Pour the chocolate mixture over the oats and spread evenly, then garnish with flaky salt. 5. Chill for at least 1 hour, until set, then slice into bars and serve. | Jake Cohen
