Tasty, soothing, healing, comforting, and super simple. 

RECIPE
• 1/2 onion diced and whole garlic minced
• 2 tablespoons Ginger, grated
• 2 pounds chicken, I used thighs.
• 2 tablespoons fish sauce
• 2 tsp chicken bouillon
• 8 cups of broth, or water
• 1 large chayote sliced or cubed
• 1 bag of spinach.
• salt and pepper to taste
• Chili pepper for spicy heat

Instructions:
1. Sear and par-cook both sides of chicken, remove from pan. 
2. In a clean pot sear onions and garlic until translucent. 
3. Add chayote, water or broth, grated ginger, fish sauce, chili pepper. 
4. Add back seared chicken, and boil for about 20 minutes. Be careful not to over-boil chayote.
