This was random dinner I threw together a few days ago but let me tell you it was SO DELICIOUS! 😋
RECIPE (3 servings, 30min prep time):
-250g potatoes
Boil until soft
-250g firm tofu
Mash together with the potatoes.
-125g flour
-50g corn starch
Salt to taste.
Knead until it forms a dough.
Cut in 4 and roll into logs.
Cut in small pieces on a floured surface and boil in salted water until they float to the top.
Broccoli pesto:
-1 head of broccoli tossed with olive oil, salt and pepper.
Roast at 200C/400F for 20mins.
Transfer half of it to a blender.
-2 Tbsp olive oil
-a handful fresh basil
-4 Tsp vegan Parmesan
-salt and pepper to taste 
-juice of 1/2 lemon
-water as needed 
Blend until smooth.
Toss the cooked gnocchi Tofu Gnocchi, Random Dinner, Broccoli Pesto, Firm Tofu, Vegan Parmesan, Lemon Water, Fresh Basil, So Delicious, Corn Starch

1 carrot, diced 
1 celery, diced
1 small white onion, diced
3-4 garlic cloves, minced 
Fresh rosemary, fresh basil 
½ bottle tomato passata 
Vegetable stock to taste 
3-4 tbsp nooch
