We are BIG Curry fans here 😋 are you ? This Kashmiri Indian 🇮🇳 Rogan Josh (Lamb Curry) will tickle those taste buds! Probably not so traditional don’t come at me 🙊 The tender lamb soaked into that flavourful curry sauce, scooped up into some pappadum will have you coming back for more! We love serving it with sliced cucumber & onions to break up the richness of the spices. Here’s the full recipe 👇 Rogan Josh (Lamb Curry) 1kg diced lamb, use shoulder or backstrap if you like a leaner cut @akarmeats 2 tablespoons ghee 1 large onion, diced 1 inch piece ginger, grated 6 garlic cloves, crushed 1 tablespoon tomato paste 1 can diced tomatoes 2 cups chicken stock 2 bay leaves 3 heaped tablespoons natural plain yoghurt Spice mix: 1 teaspoon fennel seeds 1 teaspoon ground cinnamon 1 teaspoon ground cardamom 1 teaspoon ground cloves 1 teaspoon garam masala 1 teaspoon black pepper 1 teaspoon turmeric 2 tablespoons sweet paprika 1 tablespoon ground coriander 1 tablespoon ground cumin In one tablespoon of ghee, brown off the lamb until juices evaporate. Set aside. Add the remaining tablespoon of the & start sautéing the onion until softened. Add the spices along with the tomato paste, garlic & ginger. Cook until fragrant. Add the lamb back in with its juices, bay leaves, diced tomatoes & chicken stock. Allow to come to a simmer then cover & cook on low/medium for 2.5 hours. Stir in the yoghurt 1 tablespoon at a time at the end.
