If you think chicken breast is bland, you can think again. The crunchy breadcrumbs envelop a juicy chicken breast and we smother the whole thing in a rich, tangy, and sweet, glossy glaze. Give this recipe a go and your taste buds will thank you. Hey, I'm Nutritionist Scott Apte and welcome to my food for fitness kitchen. In Fitness Circles, we seem to love the humble chicken breast. It's lean, it's protein rich, and pretty much everyone seems to like them but they can sometimes be a bit dull but not this recipe friends we're going to coat the chicken in a lovely crunchy crumb we zap it in the air fryer which keeps it crispy on the outside but lovely and juicy in the middle and then we smother the whole thing in this intense delicious glaze legitimately this could be the best chicken that you've cooked in a long time and this is how you do it dunk your chicken breast in the egg and then coat it in the breadcrumbs and then pop it onto your air fryer rack or in the basket or a wire rack if you're cooking in the oven. I cook these in the air fryer. I think it's the quickest way to do it and it keeps them really crispy on the outside and juicy in the middle. For that it's about 15 to 20 minutes at 200 or if you're doing in the oven about 20 to 25 minutes. To make the glaze we're mixing up some Worcester sauce, some honey, a little bit of water along with some chili flakes. You can leave these out if you don't like any heat at all. Half a teaspoon of mixed herbs, four tablespoons of lemon juice and 2 teaspoons of olive oil. May all of that through and then when there's about 5 minutes left on the timer for the chicken you're going to heat a frying pan on a medium to high heat and we're going to add that glaze to it and we're going to reduce it down nice and quickly so it becomes nice and thick you're going to add that beautifully cooked chicken to the grilaze and then just make sure it's all mixed through coat the chicken breast in it a few times just like turn it over and make and see here we go and then from there all you're going to do is just to plate it up I mean how good do they look at this stage oh honestly best chicken breast ever. So then for playing up I just serve it and then I'm going to squeeze some lemon juice over the top of it and garnish with some fresh parsley and then all you need to do is get stuck in. So that is outrageously delicious is that real word? Zingy, crispy, glazed chicken. I think once you make this you'll absolutely love it and it'll probably become a regular in your meal prep routine. Chicken bombs? No. Bombs. These are buffalo chicken bombs. We haven't either. We're going to try this today to two thirds of a cup of cream cheese. We are adding two cans of chicken breast. Then we're going to take our fork and just start mashing it up to break up all the big chunks. Now that the chicken is shredded, we're going to add one third of a cup of stressing. Okay. After that, we're adding one cup of shredded mozzarella which I'm sure you could use cheddar if you'd like but we are doing the mozzarella and then, we're going to use some buffalo sauce. Mmm. And this is the one that we prefer. We're going to do a third of a cup. Let's get this guy in here. There we go. Pour that in. That'll give it a little kick huh? Oh yeah and that's why they're buffalo bombs. Take our spoon and just mix it all together for our filling. Okay, we're all mixed up. Now, we're going to take a can of biscuits, an 8 count. We'll open this up. See if it works. Look painful. I love doing that. Look painful. I love doing that. Yeah. It's so If you're having a frustrating day, it's very therapeutic. So, we're going to take one of the biscuits, each biscuit actually and cut it in half. Okay, we'll take one of the halves flatten this guy as best we can. And then we'll try the rolling pan. Cuz we want it to be a little bit bigger. And definitely thin it. Yeah. Nice and thin huh? You Does that look good, honey? Yeah, I think so. Okay. Then, we'll take just a little bit of the filling. Oops, that's too much. I don't know. What do you think? Can we hold more? Maybe just a hair. Yeah. And then start gathering it up. Nice. It will form a little buffalo. Oh look at that. Let me see. Looks like a little buffalo. Perfect. Good. And then we have our cast iron skillet that we've pre-srayed with cooking spray and you're just going to set these guys in here. We're going to go ahead and finish these. We'll have sixteen of them. Okay, now that they're ready, the oven is preheated on three seventy-five. We're just going to take the skillet, put it in there, and they will bake for 10 minutes. Then we're going to do a little topping. Okay now we're going to make our little topping. I've melted some butter. Can't tell you how much. Maybe two or three tablespoons worth. We're doing a little bit of garlic powder to taste. It's really just enough to spread it over the top right? Yep. That's it. Little bit of parsley. And then we're going to use some shredded Parmesan cheese. Yes onions are clean. Don't worry about it. We're good. We're going to mix it all up. And then once those little guys those little bombs come out of the oven we're going to use our topping. Okay it's been 10 minutes. There they are. Beautiful. And now we're going to brush them with our little topping we made. Nice. So what will that do? Put it like a nice it'll make it golden and it gets that Parmesan on top. Get some parsley on there. The color will be good. Let's get some more parm on there. What do you think? Is that enough butter? Yep. Back in. Mhm. And now we're back in the oven for 15 minutes longer. And we'll check it then. Alright, it's been the 15 minutes. Let's take a look. They look good. Yes, they do. They smell good. They smell great. Wow. I still hear it sizzling. Mhm. Okay, we are going to let these cool for just a little bit so that we're actually able to touch them and we'll take some out and show them to you. Alright, let's cut into these guys. And see how they are. I'm kind of excited. Yeah I'm see what this is going to be. To see what it's like. Okay. Still hot. I'm tearing into this one. Ooh watch your fingers. I know. And there is our buffalo dip. Coming out. Yeah. I bet this is really good. I am not tasting this right now because it's super hot. It's too hot. But yes these will be amazing. Great. Alright. Ingredients: For the chicken: 1 pound boneless, skinless chicken breasts, thinly sliced 1/4 cup soy sauce 1/4 cup honey 1/4 cup rice vinegar 1 tablespoon sesame oil 1/2 teaspoon red pepper flakes (optional) For the rice: 2 cups rice 3 cups chicken broth 1/4 cup soy sauce 1 tablespoon sesame oil 1/4 teaspoon garlic powder For the toppings: 1/4 cup chopped peanuts 1/4 cup fresh cilantro, chopped 1/4 cup green onions, chopped Instructions: Marinate chicken: In a small bowl, combine soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using).
