Once it reaches a low boil, turn off the heat and fill your clean jars, leaving a 1-inch headspace. Wipe the rims with vinegar, being careful not to let any vinegar mix with the butter. Seal the jars and process in a pressure canner for 75 minutes (pints) or 90 minutes (quarts). A crucial step: as the butter cools, shake the jars every 10–15 minutes to incorporate the milk solids, ensuring a smooth, consistent texture. Skipping this step could result in separation and the need for re-processing—I learned that the hard way! Also, I recommend not doing this late at night—you’ll be up all night! Once the jars have fully cooled, check the seals and store them in a cool, dark place. Trust me, this one is not a late night canning project. I was up all night shaking those jars every 15 minutes 😂 worth it though because it cleaned out my freezer and I no longer have to worry about power outages ruining butter!
