This beautiful light green risotto is rich, creamy, packed with vegetables and perfect for a late summer weeknight meal or side dish for a crowd. I like to serve it with slow roasted salmon to create a full meal, but it will be a happy side to any summer grilling recipe!

Sticky Tofu & Fairytale Eggplant
There are some ways to make tofu that will win anyone over. Sticky tofu is one of those ways. And to call it just "sticky" is unfair to the cultural inspiration for this recipe, which is tofu dengaku, Japanese miso-glazed tofu. This recipe is very similar to that dish, but uses more soy sauce than miso, and leans a bit heavier on the sweetness of the glaze. I also opted for an Indonesian chili sauce, but if you have another that you prefer, that's totally fine too! And while I use tiny, adorable fairytale eggplant in this recipe, normal eggplant will work just fine as well.

Charred Broccoli Sandwich with Balsamic Onions & Red Pepper Sauce

Heirloom Tomato Sandwich with Tonnato
This heirloom tomato sandwich with dilly tonnato is perfect for summertime. It's salty, refreshing, filling and an easy celebration of tomatoes when they are at their peak. I use my homemade sourdough for this recipe, but really any sandwich bread will work. Just make sure your tomatoes are bought in peak summertime (July and August are ideal), and you'll be ready to go.

Cumin Braised Chickpeas with Roasted Squash
Healthy, cozy and oh-so-easy to make, these Cumin Braised Chickpeas simmer slowly with brown rice in coconut milk, and then are topped with squash that's allowed to slowly roast on top of everything. You can also make this with any good roasting vegetable, I love beets, rutabaga, or sweet potato as well.

Beet Sandwich with Kimchi Slaw & Cheddar
The best vegetarian sandwich I've ever had! It was inspired by a beet sandwich I got at a little St. Louis bakery called Union Loafers, but where their beet sandwich had sauerkraut, I opted to go in a different direction with a kimchi slaw and pan-melted cheddar. The flavor explosion is wild. Wild but great. It's a perfect lunch to prep ahead, or just to make over a lazy weekend.
