Bro. Listen listen. So we got the ancho chiles and the wajia I really can't say the chiles names but I put it in the description. I'm sorry so what I saw people do is like they rehydrated them so like they took the seeds out put like some boiling water on them and let it sit to the side for about like 45 minutes and it's going to rehydrate. So now I'm using short ribs and some chuck roast. Be a little generous with the salt because these is like thick cuts of beef so you don't want it to be under seasoned. And the reason why I never like bereave was because everything I had was like under and I did it before but I didn't like it because I think that I didn't do good but this right here oh yeah yeah this right here yeah this this is the one so what you want to do is you want to sear your beef and like right here I messed up OD because I put too much oils like I was shallow frying it you only need a little bit of oil so I took some oil out and you want like a nice sear on there because it going to lock in all of that flavor and then all of that flavor on the bottom is going to be perfect. Trust me. The only thing that I I'm going to complain about on this recipe was it was kind of like tedious because I never did it before and I wanted to be perfect. And plus this oil kept popping me. Popping my arms. Everything. So once you sear everything you want to add in some fresh garlic and an onion. You want to just like saute that for a little bit. So what I like to do is all of that stuff on the bottom. It looks burnt. It looks crazy. But the only thing you want to do is go ahead. You want to get like a tablespoon of water maybe. And just add that in there. And once you stir it again all of it is about to just come up and that's that flavor. You about to caramelize them onions. And that garlic. Trust me. Add in some tomatoes. I will shake it with this y'all. I don't like tomatoes. I was shaky. I was shaky. Then we going to add in some Mexican oregano. I said Mexico. Mexican Mexican oregano. I'm just so excited. Like I missed y'all and I hope y'all missed me too but I'm back outside now. So yeah we going to just mix everything up and like the aroma that this was given off. Like it was so fragrant. Now once the 45 minutes is up you want to go ahead and blend your chilis really really well because I didn't so I had like a little bit of chili in there but it it really wasn't too bad. So now you want to add in some beef broth. I always go with unsalted beef broth. I want to be in control of the salt that I intake because you know I do be eating some crazy stuff so I'd rather be you know like in charge of that. Now add your chilis in there right? So what I did was I added my beef in here but I made sure that I seasoned it to taste. Cuz you want this like broth taste good and it taste like nothing because the unsalted beef broth it just taste like chilies. Now you want to add some cinnamon sticks and some bay leaves. And when I say season to taste it's like put a little bit of seasoning try it and add some more if you need more. Boom. Now we going to let this cook for about three hours. If it's not shredding like this do not talk to me. I ain't have to do nothing else. So I tweaked y'all. For the bread I just added some butter on there but I added like a little bit of the consummate hints the color that's why it's a little bit orange. You want to add this right? This is going to be your bottom bread and you want to repeat this. So I got the bread all buttered up right? I put that in a in a hot skillet. Now you want to add some gouda cheese and mozzarella cheese. I did not show y'all the other side but I basically did the same thing. So when it was time for me to just flip it what I did was just buttered that other one. Put it on top and I flipped it on the butter side if that makes sense. Get it. Assembled it. And you know what I'm going to say. You know I got a bev. Stop playing me for real. This is crazy. Like come on.
