It’s been a while since we reminded you to freeze your tofu ❄️ When we... | By Vegan Punks | If you've been told to marinate your tofu for better flavour, we're sorry to break it to you but you've been sold a line unless you've been freezing the tofu as well. In our latest tofu experiment, we're testing whether frozen tofu comes out better than tofu straight out of the fridge when marinated and the results are pretty clear. This is frozen tofu. You can see it's gone a yellow color and is completely solid. Once stored, it looks spongy and water pours out when it's cut. The tofu from the fridge is less spongy and doesn't release much water. We put them both in a sandwich bag and marinated them in the fridge for 1 hour. The color of the freeze tofu is much darker and the fridge tofu is lighter. The freezer one seems to have gathered more of the liquid than the fridge one. We air fried them both for 10 minutes at 190 degrees. The results are clear. The fridge one is soft and spongy and less flavorful because it's all on the outside. The freezer tofu is crispier, the inside is meatier and the marinade has penetrated the tofu much more than the fridge tofu. So there you have it. If you want to marinate tofu, freeze and thaw it first for better flavor and texture.

Speaking as a country girl whose favorite food used to be a pub chicken schnitty, I can safely say this tofu version is just as satisfying. To make it all you do is soak your tofu in soy sauce, dip it in aqua fiber and egg crumb coating. It's super crispy, versatile, and budget friendly.

99K views · 6.9K reactions | 🍔 Feeding you for the longer weekend ahead. ✨ Or make these Barbecue Glazed Tofu Burgers to freeze for later. Serving with tomato jam because the tomatoes are delicious and abundant right now. 🍅 Tomato Jam (Optional) 12 oz cherry tomatoes 2 tbsp brown sugar or more to taste 1 tbsp white wine vinegar 1 tsp soy sauce 1/4 tsp red pepper flakes Kosher salt Tofu Burger 1 tbsp avocado oil plus more for baking 1/2 medium red onion, diced 1, 16 ozo block super firm tofu, shred with a box grater or crumble by hand 2 tbsp soy sauce 1 tsp vegetable bouillon or 1/2 bouillon cube 1 tsp garlic powder 1/4 tsp allspice 1/2 tsp ground coriander 1/2 tsp thyme 1/3 cup panko breadcrumbs 1/4 cup all-purpose flour 2 tsp brown sugar 2 tbsp white wine vinegar 1/4 cup barbecue sauce of choice Assembling: burger buns, baby kale or spinach, vegan mayo, etc. Heat a large skillet over medium heat. Add the oil to heat through. When hot add the onions with a pinch of salt and saute until softened, about 3 minutes. Add the tofu, soy sauce, bouillon, garlic, allspice, coriander, and thyme then stir well to combine. Spread the mixture out in the pan and allow to cook undisturbed for 3 minutes. Toss the tofu and spread out again, cooking undisturbed for another 3 minutes then remove from heat. Allow to cool for 10 minutes, preheat the oven to 425F and prepare a parchment lined baking tray. Transfer the tofu to a large mixing bowl with the panko, flour, sugar, and vinegar. With clean hands, mix and knead the grounds until it’s fairly easy to mold together. Scoop 1/2 cup of the mixture into lightly greased palms then press the shape *tightly* into a patty shape. Place each formed patty on to the baking tray. Lightly brush or spray the burgers with a little oil then place in the oven to bake for 15 minutes. Remove from the oven and lightly brush the tops of the burger with some barbecue sauce. Flip, and baste again before returning to the oven to bake for 10 minutes. Assemble the burger bun with your preferred condiments, greens, the burger patty, then top with the tomato jam if using, then enjoy. I mention the jam in the comments. 🫶🏽 #plantbasedrecipes #tofu #plantbaseddinner | Catherine Perez
518K views · 4.5K reactions | 🥪 the ultimate vegan Reuben 🥪 Tantalising Tofu S3 E2 @benrebuck. Honesty this blew my mind 🤯. I’ve made a few vegan Reuben’s on my page before but never with tofu before. This smoked tofu really was the real deal and you will go mad for this recipe if you try it. Trust me! 200g smoked tofu ½ cup beetroot juice 1 tablespoon soy sauce 1 tablespoon apple cider vinegar 1 teaspoon smoked paprika 1 teaspoon maple syrup (or other sweetener) ½ teaspoon garlic powder ½ teaspoon onion powder 1 tbsp vegan mayonnaise 1 tbsp tomato ketchup dash hot sauce dash vegan Worcestershire sauce 1 finely chopped shallot 2 cornichon or ½ dill pickle, finely chopped pinch paprika Sourdough or rye bread Vegan cheese Sauerkraut Slice the smoked tofu into thin, “meaty” strips. In a shallow dish, combine beetroot juice, soy sauce, apple cider vinegar, smoked paprika, maple syrup, garlic powder, and onion powder. Submerge the tofu strips in the marinade and let it sit for at least 30 minutes (or up to 2 hours for a deeper color and flavor). Air fry at 200c for about 10-12 mins flipping halfway Mix the Russian dressing ingredients- I like it chunky but feel free to adjust Spread the Russian dressing on buttered bread. Add a layer of sauerkraut, marinated tofu slices, and vegan cheese if using Butter the outsides of the sandwich and grill in a pan over medium heat for about 3-5 minutes on each side, until golden and crisp. I finished mine under the grill (broiler) to get it extra crisp #tofu #vegan #plantbased #veganfood #sandwich #reuben | Bensvegankitchen
