I'm going to show y'all how to make the best cake whipped cream icing that there ever was. Every time one of my kids has a birthday party I make this icing and everybody raves about it. It's got a nice light fluffy texture but it's not too sweet you know. This is how I make it. Best part is it takes three ingredients. Heavy whipping cream, some instant pudding mix, and powdered sugar. Alright, so I'm actually doubling this recipe because I'm icing a cake and cupcakes with it. So the normal recipe is one quart of heavy whipping cream, a three point4 ounce box of instant pudding mix and a third of a cup of powdered sugar. And you can see I just put everything in my stand mixer on about medium speed until it's all incorporated. Then I turn up the speed and let it just thicken up on you. Now since I doubled the batch it took almost 10 minutes y'all to come together. If you do in one single batch it's not going to take that long. Maybe about 5 minutes. Um and scrape down the sides every so often and make sure you're not having any dry spots. And I'm going to color this one light pink because that's what my little girl wanted but you can color your icing any old color you want. Okay we're really turning up the speed now and you going to see it start to thicken up. And listen don't do what I did and scrape the bowl with the betas going. Did y'all see that? Yeah. It made a big old mess. Alright see we getting there. Give it another scrape down the sides. And now we can see she's really thickening up. Let's check it. Alright now this is it. This is what you want. You see how it's kind of strong enough to stand up on its own? Y'all I I'm telling you I have to resist sticking my whole face in this bowl. It is so good. It's not too too sweet but it's just sweet enough. Mm. And here's the mess I made a while ago. This poor cupcake had to be sacrificed y'all. What a shame this one got splashed on so I guess we have to eat it. Josh will be silly. Oh my gosh. So Now what I like to do is make this the day before. That way you're not scrambling to make the icing and put the decorations on the cake and everything the day of the party. So my the birthday party's tomorrow. I'm making my icing. And I did my cakes and stuff already. I'm going to refrigerate everything and then tomorrow all I gotta do is put it all together. Alright and here's the finished product. The little kitty cat cake and some beautiful little cupcakes to go with it for the birthday party.
