Remove bones then season with kosher salt then fry brine in the fridge over night. The next day season and place herbs in the cavity where the bones were then tie the bones back on. Season all side like in the video. Then into a 250 degree oven until internal temp of 120. Remove from oven and turn it up to 550. After 30 minutes place it back into the oven until internal temp of 130 or desired doneness. It feels like day nine 76 of living on the surface of the sun here in Texas. It's still very hot outside. And don't be wrong I'm still grilling but just not as much. So I want to see what happens if I cook this in an air fryer because the air fryer doesn't heat the house like an oven. I don't have to stand outside in the heat and it should cook quickly. Seasoning with Hardcore Carnival Red. The only thing I'm kind of nervous about is that pork can get notoriously dry. But I have a solution. And the solution is bacon. Bacon is the solution to a lot of things. If I wrap this tenderloin in bacon before I put it in the air fryer it should kind of work to coat the outside and when the fat renders down it should basically keep everything nice and moist. That's my plan. I'm just looping the bacon around. It's not rocket science. Pork surgery. If I do this right I'm hoping that the bacon will also turn nice and crispy so not only will it keep the tenderloin moist but we'll get a nice crispy texture on the outside. I know I've never made this before so we're going to find out what happens together. You need exactly however many pieces of bacon I just use. Obviously if you know anything about facial relations. That is longer than that so you're going to have to curve it to fit it in. No big deal. Look at that. It's beautiful. Okay so aside from the fact that it looks slightly yum. It came out pretty good. I did tempt this with a meat thermometer to make sure that it was cooked all the way through. I was looking for 145 degrees and I got it. Oh my god. It is so juicy. Look at that. It's like a beautiful little medallion with its own piece of bacon. Mm. It's really juicy and usually tenderloin doesn't have like a ton of flavour. But when you add bacon to it that all changes. Look how beautiful that is. It's beautiful. So all up this cooked for about 25 minutes at 350 degrees. And if your bacon's not crispy enough I would just cook it a or two longer at 400. That's a big win. It's really good.

First up, we're going to thoroughly dry and then heavily salt your prime rib with kosher salt. Put that onto a tray and get into your fridge overnight. Next day, we're going to cut the bones off the meat but put them off to the side. We're going to use those later. Cut up some herbs. We used some thyme, rosemary, and a bit of sage but really whatever you have on hand will be great. Then, we're going to make an amazing binder with mayonnaise, yes, mayonnaise, a bit of dijon mustard, and rooster. Whatever you want to call it. Trust us on this one. Then, we're going to heavily season the prime rib with none other than Traeger PrimeRib Rub all over and then coat it in that mayo mixture that we made earlier. Trust us, it's going to do amazing things to the prime rib. Put a bunch of herbs on the cut side down and we're going to add the bones back on to where you cut them off and then tie them with string. Stick your leave-in thermometer meter right in the center of the roast. Get this onto your Traeger. About halfway through cooking, you're going to pour in some really nice beef stock off to the side. Make sure it doesn't touch the meat. After this is all done and it's ready to rest, going to strain off those juices and you're going to have the most insane azu with all those meat drippings on there. Once the meat is rested, take off the bones and carve. Get the all over it. I'm telling you guys, this is going to be the best prime rib you've ever had.
