Get it right, a thin and crispy base with a light, slightly chewy crust and it's an absolute triumph. What makes it is the simplicity, and quality of the ingredients. This makes Sourdough the obvious choice of dough, as it's nothing more than 00 flour, water and salt. Add in a little science, and skillful handling (which only comes with practice, but a quality dough formula will make this so much easier) and magic can happen! The science here, is done for you with Pizzapp - a free app to download to your phone, which with give you the exact amount of each ingredient needed to create perfect pizza dough based on your time frame to make the pizza dough, and temperature of your workspace (as long as this can remain consistent throughout the process). You just tell the App: 🍕How many pizza dough balls you want to make 🍕The weight of each ball required (250g in this case) 🍕How many balls you want to make 🍕The type of yeast you're using, in this case it's our stiff sourdough starter from episode 1 that is well fed and active. 🍕salt % (I use 3% salt). 🍕The hydration % which just means how much water you want to go with, in this case it was 68% which makes an easy to handle dough 🍕The room temperature (RT). 🍕How many hours you want to allow the dough to prove for (RT Leavening) which was 24 hours in this case which brings a great flavor. and it will generate the recipe tell you, to the gram how much of each ingredient you need to put into the mixing bowl. After that, you just follow the same stretch and fold process used making a loaf that I explained in detail in episode 2, and then just ball up the dough 2 hours before the finish time. This app literally transformed my pizza making game, I can't recommend it enough as it allows you to make perfect pizza dough in almost any conditions.
