Back in the day, the nuns in the convents, needed many eggs cause they used the egg whites to help them iron their uniforms. But then many yolks would be left, and so they started doing sweets with them, and so the Conventual Sweets in Portugal were born, and for many centuries, the nuns created the most delicious recipes...
