Simple and easy to make, with a great presentation and amazing flavor! Rub your pork loin with a binder, I used mustard. Lay out your strips of bacon so that they match the length of the loin, so just top of wax paper. I find bacon wraps better when it’s at room temperature. Cover the loin in salt pepper garlic and then begin to wrap it in bacon. Use the wax paper to help you wrap it nice and tight. Then dust it up with the SPG all over. Set you smoker to 230 and start mixing your vegetables. Add potatoes, carrots, green pepper, sweet onions, SPG, and two table spoons @baconupbacongrease Mix well so that the bacon grease covers everything. Place the wrap loin on the top shelf with the potatoes underneath to catch delicious bacon and pork drippings. Now get to work on your glaze. 1 cup honey 2 tablespoons maple syrup 1/2 cup black coffee 1 tablespoon Weber Buffalo Trace Seasoning 2 ounces Bourbon Put your pot of glaze in the smoker. After 90 minutes your glaze should be reduced and your pork should be at 130-145 degrees. Start applying your glaze with a brush every 10 minutes for the next 30 minutes. Let rest for 10-15 minutes. Cut into 1 inch slices and serve with potato veggies. I served them on rolls with the glaze on them. Enjoy! And Merry Christmas to you all!
