It is a number one... | By Cooking | Morning. We're going to make us a quick little pineapple dip and y'all are going to love it. It is so easy and so good. It's different from others. It's not a savory. It's a sweet. So what I've done is I've taken two blocks of cream cheese. If you're having a really big crowd coming in, you can do three. And what I did is I took these the box part off of it and I set this in the oven on 350 degrees just to kind of get it a little bit soft because it had been in the refrigerator that it was hard as a rock. I might have messed up. Let me see. Let me get my scissors. We going to get it out one way or the other. We going to get it out. It's real easy and we'll take a bite as soon as we get done. My bae loves this. She just absolutely loves it. It's one of her very favorite things. You don't eat this with a chip. You eat this with a cracker. We like the little round crackers ourselves. That's what we like with it. Got some in there. My big mommy love cream cheese. Lord. She just eat it just like this and I like it too. I'll probably lick this paper when I get through. There we go. I got it pretty clean. Alright. So, what you going to do is mix this around good and we're going to put some sugar in it. Now, when I'm using three packs of cream cheese, I use a lot more sugar that I'm using today. But I'm only putting in a half a cup of your granulated sugar in it. We're going to mix that around just a few minutes. It's just so easy that you just need to make it. Now then I bought some crushed pineapple. You got to be really careful not to put the juice in this in this dip because it'll make it too watery. So what I do and I couldn't find my regular tea strainer today but I'll just put it like this. It calls for a whole can but since I'm not making as much of it, I think I'll just probably I have to pay it. I may put the whole one in it and have it real pineappley. Some of you probably have already made this because it's in your first cookbook. It's on page one forty-seven. Just make sure you get it all out. Blend it up real good. Little juice coming out. Okay? That looks good. That's a half of that can right there. See what it looks like. I might get just a little bit more. It taste so refreshing and I think that's why that they like it so My mother always saved this juice out of stuff like this and she would she would make a punch. We had punch at Christmas time and she put this in it. She put some Kool-Aid and juice and orange juice and all kind of stuff in there. But she always saved this. We've been making this for a long time. Then we're going to that's mixed up real good. Now comes your last ingredient such as grated cheese. If you were doing the whole can of pineapple and three things of your cream cheese, you would use let me see how much it is. One and a third cups of finely grated cheese but we're not making that much. So, we're just going to get me a knife. There it goes. Just pull it off. Y'all now you know that cheese is in the bag. It's already grated. It's lacking. Let me put it that way. In my opinion. Now, y'all may have a different opinion. Alright, now I'm going to use my big side grape. I'm going to do little short strokes like this instead of long ones and it'll be smaller. Then we're going to take a bite. It was that easy. It is it is so refreshing. I'm telling you. What I'd like to have today is some good pimento cheese out of my recipe book. I love that stuff. I could eat them out way pimento cheese. And when I was a little girl I couldn't stand it. I mean I didn't like it. Mom would make it and I don't like it. But through the years I guess your your taste changes and you learn to like it. I've been outside spreading grass today. Where the septic tank was and I don't have any grass. That ground. They had to dig so deep that it's just red hard clay out there. So what I did early this morning I turned on the sprinkler. And so when I did that I think I pour this juice in my water and have me some pineapple flavor today. See how it taste. Taste like good pineapple. Reason I'm doing that is because I need to use this measured cup. See how much cheese I've got here. So y'all will kind of sort of know. Looks like it's going to be a cup, doesn't it? Okay, let's put that in. And do just a little bit more. I like buying really cheesy. So, I guess I'll post this in the morning. This is Saturday right now and I'm got all my stuff to have to prepare. I'm going to make this squash Alabama. I'm going to make a green bean casserole and I'm going to make this dip and I'll make a fruit salad. I bought a fresh pineapple and it looked kind of green. So, yesterday, I set it out in the sunshine. I thought well, it needs to wrapping up. I know my hair is a fright. That's because I washed it last night but I took my shower and I went to bed with a wet head. Let's see how much this is. That's about a half a cup. So that's about a cup and a half of cheese we're putting in there. Alright, let's stir that up a time or two. To get us out of cracker. And we're fixed to eat a soup. Wasn't that easy? I mean, it's so easy and yet, it's going to be absolutely delicious. I just didn't want much sugar in it this time. We're trying to watch our sugar a little bit. And the pineapple makes it so refreshing. If you just want to venture out, the whole thing of pineapple in there, it'll be fine but remember, you want to make sure that it's drain good, okay? Cuz you don't you don't you want this kind of solid more and when you serve it, serve it in a bowl because it's more of a dip than it is a cheese ball. That's plenty sweet. It is so good. See all the cheese in it? And the pineapple is so refreshing. Y'all make this. I'm going to put it in a pretty bowl. And we'll have it. I might put it in a candy dish. I hadn't got that much. I'll show it to you. The problem with this is that you wind up eating too much of it. It's good like before dinner or appetizer or in the afternoon when you just want something good. I'm going to wrap my cheese up now and some good tight paper. Plastic wrap and put it up for another day. You going to love this y'all. It's called pineapple dip. And it's just real good. There it is. Right there. That is my oh right there. It's my pie plate. I put it in a pie plate. But today I'm not going to put it in a pie plate. I'm going to put it in my own candy dish because I just don't have that much. Okay. Y'all have a wonderful Easter morning and know that I did this on Saturday but I just was going to show it to you on Sunday. He has risen. Love y'all. Buh bye.

You want to start with one brick of Pepper Jack cheese, one can of Rotel tomatoes, Next ingredient is one brick of Colby Jack cheese and if you don't have enough room in your cast iron skillet, just start breaking up these cheeses to make em fit. Next ingredient is one brick of Philadelphia cream cheese. And then one can of green chilies. Typically, they'll come in a smaller can. Okay, once all of your cheeses and the green chilies, rotel tomatoes are added. Last ingredient here, this is regular ground beef and I'm just going to throw in some original taco seasoning. So, we're just going to season this up, right? I already brown this before we started here. So, just use a skillet and you just want to brown up some ground beef. Also, could use some turkey meat or some chicken. Just whatever kind of protein you're feeling. Okay, once that's mixed, you just want to add it into your cheese skillet here. Little bit here. Alright, make sure if you have a little plastic edgy on your cast iron skillet, you want to take that off and then throw that in the oven. Okay so while our cheese is all melting in the oven there I'm going to go ahead and get my tortilla strips. These are corn tortillas. And I'm going to cut these into small little triangles. So one cut there. One cut there. Alright. Do the other on the same side. One cut there. Alright and we're going to go ahead and make some homemade tortillas. Alright so once your oil this is just regular vegetable oil. Get a thermometer here. It needs to be at at least three fifty. It could be a little bit higher if you want but just make sure you don't burn them. And then you want to go ahead and dip these in. Let's go ahead and do two at a time. Ready? There they go. Oh, doesn't that look nice? Go ahead and get two more in. Okay, so you just want to give all of these a little blitzy blue. Get em all nice and crispy. Look at that. Homemade tortilla chips. So easy. Alright, once your chips are all nice and crispy, you can go ahead and plate em up. Just put some paper towels down to soak in all that oil there. Last one here. Look at those homemade tortilla chips. I couldn't believe how easy they were. So, we're just going to sprinkle a little bit of salt on top. Let those cool and and get out our cheese dip. Bring those wonton wrappers back in. Add one scoop to each of our wrappers. Just like that. How easy is that? Measures it perfectly for this recipe. Looks good. Alright, I've got my oven set at 350 degrees and this is only going to take 10 minutes or until those wontons are nice and alright, our spinach artichoke dip wonton cups are done. Look at that. How easy was that? And they are so pretty. Okay, they're a little hot here but I'm going to try to bring my plate in. Oh yeah. Okay. I'm excited to try this though so. Mm. Oh wow. Mm mm mm. Mm.
