Sam Stern on Instagram: "Cheesy potato waffles using leftover mashed potato! I always make far too much mash and this is an amazing way to use the leftovers. It’s a super simple and quick recipe that’s perfect for breakfast the following day. Top with bacon and eggs or smoked salmon. 
Recipe:
250g leftover cold mash 
1 handful of mature cheddar or Gruyere
1 heaped tbsp finely sliced chives 
Seasoning 
1 tbsp olive oil 
30ml milk 
1 egg, beaten. 

30g flour 
1/2 tsp baking powder 
1/4 tsp bicarbonate of soda 

Bacon 
Eggs

1. Combine the mash, Gruyere, chives, seasoning, oil, milk and egg. 
2. Combine the flour, baking powder and bicarbonate of soda. Fold the flour mix into the mash mix. 
3. Spoon half the mixture onto your preheated and oiled waffle iron. Cook for 8 minutes. It tastes soo good that noone will notice the difference! - all you need is..
-100g Butter
-11 Egg Whites 
-100g Cream Cheese
-200g Mozzarella Cheese
-2 Tbs Sour Cream
-1 Tbs Parmesan Cheese
-1 Tbs Beef Gelatine Powder 
-2 Tbs Heavy Cream
-1 Tbs Egg White Powder
-Pinch of Salt 

1. Melt your butter in a pan.
2. Cook up the Egg whites with your pinch of salt on a medium to low heat until there is no more liquid at the bottom of the pan- making sure to not brown them.
3.Put aside the Heavy cream & Egg White Powder.
4.Combine the remainder of ingredients and mix well in a food processor. 
5. Gradually start adding the heavy cream. Once mixed well- add your egg white powder.
6. Mix all ingredients well & Serve!
