I learned how to make spring rolls recently and decided to try a few crazy combinations for a bit of fun. You guys loved my butter chicken dumplings recipe so I decided to do a spring roll version! :)

INGREDIENTS (makes 12)
- 100g rice, cooked and cooled slightly
- 250g chicken
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp garam masala
- 200ml butter chicken sauce, store bought or homemade (my homemade sauce recipe is in my ebook, link in bio!)
- handful corriander
- 12 spring roll wrappers
- 1 egg white

METHOD
- Precook your rice and butter chicken, with store bought or homemade sauce
- Lay a spring roll wrapper in a diamond shape and add some rice, butter chicken and coriander to the bottom of one corner

Had some leftover dumpling (gow gee) wrappers in the fridge and rather than watching them go stale I decided to make this plate of cheat noodz. Super quick and simple - all you need to do is stretch out those dumpling wrappers, boil for a minute then toss through your sauce of choice! l’ve been seeing these steamed rice paper dumpling recipe and had to try it. I used cabbage, carrot and zucchini, but you can use whatever vegetables you like. It’s simple to make with sauteed vegetables. It’s so tasty and healthier than fried dumplings. Use your favorite dipping sauce and enjoy!

Cook Time: 45 minutes Makes: 15

2 tbsp oil
1 tsp ginger chopped
2 cloves garlic chopped
1 small onion sliced
1 cup cabbage sliced
1 carrot sliced
1 zucchini sliced
½ tsp salt
15 medium sized rice paper wrapper

Heat oil in a pan and turn the heat to medium high.
Add ginger, garlic and saute for 1 minute.
Add onion and saute for 2 minutes.
Add cabbage, carrot, zucchini and salt.
Cook for 5-7 minutes and remove from heat.
