➡️ Recipe: Fresh Rice Noodles

Serves 2

* 1 cup rice flour (glutinous rice flour won’t work)
* 1/2 cup tapioca starch 
* 1 3/4 cup water 
* 1/4 tsp salt
* 1/3 cup oil, use neutral oil like avocado oil (for brushing) 

Tools—
* Spatula 
* Large pan or pot 
* Steamer rack 
* Whisk
* Brush
* Metal steel pan or glass container (my measured around 5 1/2 x 7 1/2 inch)
* Cutting board to flat surface to lay noodles 

1. In a large bowl, combine rice flour, tapioca starch/flour, water, and salt. Whisk until everything is dissolved, leave whisk in bowl. For best results let the batter sit for 30 minutes before steaming.

So my mum bought like 2kg of fresh Hakka noodles and stored them in the freezer for us to eat anytime hehe. We are not Hakka so Hakka people please let us know how you make it at home hahaha.

HAKKA MEE NOODLES

INGREDIENTS:
TO MARINADE:
600g pork belly mince (sub chicken for halal)
1 tbsp light soy sauce
3 tbsp fish sauce
1 tsp tapioca flour
dash of white pepper
salt to taste

TO FRY:
2 tbsp cooking oil
2 cloves garlic
2 shallots

TO BLANCH:
3 l water
1 tsp salt 
100g choy sum
2 portion Hakka noodles 

FOR GARNISH:
1 stalk spring onion (chopped finely)

METHOD:

rice noodles at home. The key ingredients to making rice
noodles is obviously rice flour. You'll also need tapioca
starch or tapioca flour. We're going to need one cup of rice
flour and a half cup of tapioca starch. We're going to season
it with a little salt for flavor. Now whisk in one and
three/ 4 cup of water. Whisk until everything is dissolved
at the bottom and keep the whisk in the bowl. I'll tell
