Ingredients: • 1 lb diced chicken breast • 1 tbs Avocado oil • 1/2 tsp salt • 1/2 tsp pepper • 1/2 tsp garlic powder • 1/2 tsp smoked paprika • 1/2 tsp Italian seasoning • 1/3 cup fresh herbs, minced (I used dill, basil, thyme) • 3-4 garlic, minced • Zest & Juice of 1 lemon • Sun-dried tomatoes about 1/2 cup • 1 lemon, sliced • 1 Boursin cheese • 1/2 bag chopped frozen spinach (6 oz) • 1.5 cups orzo, dry • 2 cups chicken bone broth or chicken broth • 1 cup water Instructions: 1. Preheat your oven to 400 F and set your rack to the middle position. 2. Grab a large baking pan (9x13). Add your diced chicken breast, avocado oil and seasonings. Next add your garlic, fresh herbs, lemon zest, lemon juice, and sun-dried tomatoes. 3. Create a whole in the center and add your Boursin cheese. Next add in your frozen spinach, orzo, bone broth and water. Use a spatula to push down your orzo into the liquid and make sure everything is evenly distributed. Add your lemon slices on top. 4. Place in the oven and bake for about 35-40 minutes or until your orzo is cooked through! 5. Wait 10 minutes, Mix and serve!! Super important to wait to allow the orzo to soak up the remaining liquid. Also please make sure you’re using a 9x13 CERAMIC pan. Cooking times may vary with different sizes and kinds of pans! If meal prepping, place into individual containers and store in an air tight container in the fridge for up to 5 days.
