I spotted these being sold at the Matunga market in Mumbai, bought a bunch and turned to Google to look for traditional recipes. While we use the flowers to make a bhaaji (subzi) & fritters in Marathi cooking, I’ve never seen the leaves being used. While researching recipes online, I came across Kathurumurunga Mallum, a Sri Lankan recipe which has the most unique way of cooking the leaves that doesn’t involve any boiling/ blanching/ cooking in oil. This method makes this preparation feel very fresh and light + lets the leaves retain a perky green colour, that looks beautiful against the red of tomatoes and yellow turmeric-stained coconut specks. Since it was my first time trying these leaves- I was very eager to taste them. The leaves have a very distinct flavou, and a mild herbaceous bitterness that I really enjoyed. Here’s the recipe that I’ve adapted from a blog- wildrosesnowdrops (can’t find them on Insta- if you do, please tag them). In a bowl, combine 1 cup packed agathi leaves, washed, stained and finely chopped 4-5 shallots, finely chopped 1 small tomato, chopped 1 green chili, finely chopped Salt, to taste 1/4 tsp turmeric powder 1/4 tsp red chili powder 1/4 cup packed grated coconut Mix together and then, add to a pan, and sauté without any oil for 6-8 mins. I also covered and kept these for 2-3 mins. Uncover, serve with a squeeze of lime and serve. Made for a great side for my lunch- as a warm salad of sorts. I was reading about how, these leaves are/ were typically eaten on Dwadashi- to break the Ekadasi fast, since they are supposed to be cooling/ good for the stomach. And also that given the leaves are quite potent, they should be consumed not more than once every two weeks/ twice a month. When working with a new ingredient, it’s important to understand the traditions and practices of communities familiar with the produce, since these often contain wisdom that modern science might not yet be up to speed on.
