Preheat oven to 400°. 2. Spray the bottom of a 8 x 11 baking dish with avocado spray. Place the block of feta cheese in the middle and crack eggs around the block of feta cheese. Drizzle with olive oil and seasoned with salt and pepper. 3. Place the baking dish in the oven uncovered for 8 to 10 minutes until the eggs are cooked through. 4. remove baking dish from the oven and use a fork to scramble the eggs with the feta cheese until everything is combined and fluffy. 5. Serve as is, on toasted avocado bread or on a flatbread with fresh spinach sliced tomato and mayonnaise. 6.
