Ingredients:
3 pieces vermicelli (soak).
1/4 cup dried shrimp ( soak).
24 peeled shrimps .
1/3 cup shredded carrot.
7 green onion ( white part only).
A little of red chili julienne.
2 shallots.
1 small cucumber.
Some cilantro.

Ingredients for salad dressing:
5 cloves garlic.
2 tbsp sugar.
1/2 tsp msg ( optional).
5 tbsp vinegar or lime juice.
4 tbsp fish sauce.
1/4 cup roasted peanut.

INGREDIENTS:
2 nests of vermicelli noodles 
1 bag of coleslaw mixed veg 
4 heaped tbsp of peanut butter 
4 tbsp soy sauce 
2 tbsp honey/maple syrup

METHOD:
Pop the noodles in a bowl and pour over enough boiling water to cover. Leave to stand for 5 minutes then drain and add them to a large salad bowl.
Add your crunchy veg to the noodles.
In a small bowl combine the peanut butter, soy sauce and honey and whisk until completely smooth (it takes about 2 minutes of constant stirring).
Finally pour the dressing over the noodles and veg, mix thoroughly and that’s it!

Serve! 
If you want to give this a 🌶️ kick, swap the honey for sriracha!
