These Greek Roasted Potatoes are generously seasoned with oregano, lemon juice, and garlic, then roasted until they’re pillowy soft on the inside and crispy on the outside. Make them for a mostly hands-off and addictively delicious side dish!

It's the ultimate easy comfort food - Creamy, smokey and so delicious. I've made this before with sliced potato, but this potato wedges version is such a treat! I've written up the recipe below- let me know if this one's going on the list!! A x Feeds 4 1.1kg frozen potato wedges 7 rashers of smoked Streaky bacon Oil for frying 1 onion finely sliced 80g finely sliced spring greens 250g baking camembert wheel 300ml double cream 300ml chicken stock (cooled) Ground black pepper 2 or 3 sprigs of fresh Thyme -Heat the oven to 200C -Mix up the chicken stock to allow it time to cool -Place the wedges on a baking tray and in the oven until crisp and golden. -Fry the bacon in a little oil in a large non-stick frying pan for 5 minutes. Remove from the pan, cut into bite size pieces and set aside. -Add the onions and spring greens to the pan. Fry on a medium heat for 5 minutes until soft. -Mix the double cream with the cooled stock. season with salt and pepper and a few Thyme leaves. -Cut the camembert in half widthways, so you have two circles. Cut each circle into 6-8 triangles. -In deep casserole dish, roughly 24cm across. Place half the potato wedges in the dish. - Sprinkle over half the bacon pieces, spread over half the onion and spring green mix and pour over half the cream sauce. Wedge half the camembert triangles between the potatoes. use the other half of the ingredients to do another layer. Bake in the oven for around 30-35 minutes or until the camembert has melted and golden.
