So good you know I had to share again! What you need: * 3-4 Lb Beef Chuck Roast * 2 Leeks, large * 2 Fresh thyme Sprigs * 1 Yellow onion, Chopped * 4 large Carrots, chopped * 5 Garlic cloves, minced * 2 Bay leaves, dried * 2 cups Beef stock * Black pepper & Kosher salt to taste * 2 tbsp Neutral oil * 3 tbsp butter * 2 cups Red wine Preheat oven to 350 Prep veggies and chop Prepare beef. Cut into 3-4” thick pieces Generously sprinkle salt and pepper on all sides & ends. In a braiser or Dutch oven on medium-high heat , add the 2 tbsp of oil into the pan.
