5hr · 7 servings Serves: 6-8 Prep Time: 5 Minutes Cook Time: 5-6 hours 8 lb. raw pork belly, skin removed 1/2 cup Rossarooski's Honey Rib Rub 1 stick salted butter 1/2 cup light brown sugar 1/2 cup fresh honey or agave 1 cup favorite hickory BBQ sauce 1/8 cup Greg’s 4 letter rub Burning the recteq Ultimate Blend pellet pre-heat recteq pellet grill to 250ºF. Cube raw pork belly into 1.5"x1.5" cubes. Coat with binder and season all pork belly cubes liberally with Rossarooski's Rub. Arrange cubes evenly onto a full-size wire rack and place on recteq. Smoke for 3-4 hours. Place smoked pork belly cubes into an aluminum pan and cover with brown sugar, honey or agave, butter, Gregs rub, brown sugar, and BBQ sauce.
