Ingredients (serves 4)

1.5 kilo lamb shanks
2 tbsp ground cumin
1/2 tbsp ground turmeric
1 tbsp cayenne pepper
1 tbsp salt
1/2 cup cold water
2 red onions sliced
1 tbsp brown sugar 
1 tbsp salt
1 tbsp vegetable oil 
4 garlic cloves
3 medium tomatoes
1/2 cup chopped coriander
1/2 cup chopped parsley
3 tbsp saffron water
1 cup soft prunes
2 tbsp white sugar
3 tbsp orange blossom water
1 cinnamon stick chopped in half
1 cup dried apricots
1/2 cup almonds
1 tbsp extra virgin olive oil 

Step (1)
