And one of the keys to eating clean is staying full. Full of vegetables, loaded with fiber, full of quality, protein, and full of healthy fat. White soup, has it all. Start off by slicing a whole white cauliflower, a quarter of a white onion, and a small bit of garlic. (I tried with shallots, but white onion works better here ) Place on a baking tray. Dairy-free & gluten-free for my friends with intolerances!   Full recipe below.👇🏼 For details and substitution ideas, comment “RECIPE” and I’ll send the link. 😊   INGREDIENTS • 1 butternut squash (4 c diced) • 3 large carrots • ½ a large apple • ½ a medium yellow onion or 1 small • 1 bulb garlic • 1 inch ginger root or ⅓ tsp ginger powder • 1 Tbsp fresh thyme, leaves removed from stems, or ⅓ tsp dried thyme • 2 Tbsp extra-virgin olive oil • 1 tsp salt • ¼ tsp black pepper • ¼ tsp ground cinnamon • 3-4 c low sodium vegetable broth • ½-1 c unsweetened coconut milk or milk of choice   DIRECTIONS  • Preheat oven to 400℉ (200°C). Line sheet pan with parchment paper & spray with cooking spray. Peel the squash, cut it in half, and scoop out the seeds. Dice it into 1-inch-sized pieces. Roughly chop the apple, carrots, & onion. Remove the fresh thyme from the stems. Cut the top end off a whole bulb of garlic and peel the ginger root.  • Place the squash, carrots, apple, onion, bulb of garlic, and ginger on the prepared baking sheet & coat in olive oil, cinnamon, and salt and pepper. Add the fresh thyme. Bake in the preheated oven for 30-40 min. The squash is done when easily pierced with a fork.  • Add the roasted veggies to a blender except the garlic. To add the garlic cloves, carefully squeeze them out of the skin being careful not to get the skins in the blender. Then add 3 cups of the vegetable broth and the coconut milk. • Blend until smooth, pour it into a large pot & heat on medium until it starts to bubble and then lower heat and warm it for another minute or two.
