12 slices Prosciutto 4 cup Baby spinach 1/2 Shallot 6 Eggs, large 1 Kosher salt and freshly ground black pepper (if butter is salted then omit salt) 1 tbsp Butter, unsalted 6 oz Gruyere or cheddar, grated 1 1/2 cup Heavy cream Preheat oven to 375º. Spray 14-15 cups of a muffin pan with baking spray. Cut each slice of prosciutto in half and press into a muffin cup so that it lines the cup.Heat butter in a skillet over medium heat and add shallots. Cook for about a minute, and then add the spinach cooking until it is wilted, about 2-3 minutes. In a large bowl, whisk eggs with cream and add cheese. Divide the spinach mixture in the muffin cup and then the same with egg mixture. Bake for 15- 20 minutes or until they are puffed & golden brown. Cool 10 minutes.
