Red Tacos with Queso Fresco and Piquín Salsa Verde
It is #TacoTuesday, and here is a fabulous one - tacos rojos, or red tacos, from Nuevo León! The masa is mixed with a tomato and guajillo sauce that gives the tortillas their red hue and adds flavor too. I stuff these with a tangy, salty seasoned queso fresco filling mixed with cooked tomatillos and tomatoes and bathe them in a fire-roasted salsa verde. It's a delicious mess!!
