Preheat oven to 175°C (350°F) and prepare muffin tin. 2. Mix dry ingredients in one bowl. In another, whisk sugar, eggs, oil, buttermilk, and pineapple. 3. Combine wet and dry, then fold in carrots and pecans. 4. Fill muffin cups 3/4 full and bake for 20-25 mins. Cool before frosting. Walnut Crumbles • 50g brown sugar, 80g flour, 80g walnuts, 80g butter, 1/2 tsp salt. Mix until crumbly. Sprinkle on muffins before baking.
