Working with just 1 flatbread at a time, lay it horizontally on your work surface. 2. On the long side closest to you, add on 3 slices of Swiss cheese side by side. 3. Using a slotted spoon, add about 1/3 cup of sauerkraut on top of the cheese followed by 2 Tbsp of thousand island. 5. Next add on 1/3 of the corned beef. 6. Roll it up tightly and then cut it in half. 7. Repeat two more times. 8. Heat a skillet over medium heat and add in a couple tablespoons of avocado oil. 9.
