Ingredients: Cake: 1 cup sifted cake flour, 1½ cups sugar (divided), 1¾ cups egg whites (room temp), 1 tbsp warm water, ½ tsp salt, 1½ tsp cream of tartar, 2 tsp vanilla extract. Frosting: 3 large egg whites, 1¼ cups sugar, 5 tbsp water, ¼ tsp cream of tartar, 1 tsp vanilla extract. Topping: 3 cups sweetened flake coconut. Instructions: Preheat oven to 350°F. Sift flour with 1 cup sugar. Whisk egg whites with water, salt, cream of tartar, and vanilla until soft peaks form. Gradually add sugar, beat until stiff peaks form. Fold in flour mixture in 6 parts. Bake in an ungreased tube pan for 35-40 mins. Cool inverted. For frosting, whisk egg whites, sugar, water, and cream of tartar over simmering water. Beat on high until fluffy. Assemble cake with frosting and coconut.
