Marvelous Mexican-Inspired! | Marvelous Mexican-Inspired! Simple, layered mexican dish that will delight your tastebuds. #dinner #mexicanfood #chicken #easyrecipes | By Scott & Karen | We like this dinner. This is three cups of cooked shredded chicken and we're using rotisserie. And then this is one can of black beans rinsed and drained. Then we're adding one can of petite diced tomatoes. Petite. Petite. Okay. Little guys. And then two green onions that we've sliced. Perfect. And we're going to mix that all together. Okay, that looks good. We're going to set that off to the side and work on our sauce and this is eight ounces of cream cheese softened. Okay. To that, we are adding 2 tablespoons of milk. And then we are adding some taco seasoning. This is going to be two tablespoons. Is that spicy? I don't remember. This one is up just a little bit. Cuz we're using the original. Okay. That's good. You're happy about that. Uh huh. And we're going to mix it together. Okay, that looks good. Now, we're going to add three quarters of this. Okay. Into our chicken mixture. Mm. We're adding a little bit of the spice. I'll say. And we'll mix this together. That looks pretty good. Now we have a nine inch glass pie plate. And we are going to take a third of the chicken mixture. And we're just guessing. I'm going to spread this around. Whoops. Running out of hands in the room. I'll say. Okay. Next, we are topping it with one flour tortilla. Ah. We're going to get some layers going on here. Exactly. One tortilla. And then we're going to do half of the remaining chicken. Okay. Ooh I'm going to like this. It's been a long time since huh? Mhm. But I yeah I remember. I mean it's been at least several years. I know. Since we've had. We haven't done it. I know. Cuz it was always so good. I've just been making every other thing. I know. That's the truth. Mm hmm. This is going to be a full pie plate. That is for sure. Oh yeah. Yeah. I mean look it's already like getting mhm. To the top already huh? Okay. Let me see if I can get closer. Now we're going to add some cheese. Okay. We're doing a quarter cup of Mexican or fiesta blend. Jeans. That's my favorite kind. I know. I believe. Now we take our second tortilla. What? Yep. You heard me. Okay. And then we do the rest of the chicken. Okay. I think we need a deeper pie dress. Yes, I know. I think so. What are they talking about? Now we do another quarter cup of that cheese. This really is layered huh? Oh my goodness yes. I mean really. That's a lot of layers already. It is. Last tortilla. Okay. And then we take what is left of our sauce and we're going to spread it over top. Okay, last thing is more cheese. One last layer, huh? That's the fun one. And hopefully it all stays in here. Oh yeah. You think it'll run off? I certainly hope not because my oven and I would not be very happy. That's why we're going to cover it. Exactly. Alright. Cover it with some foil. And this is going to the oven. It's preheated on three seventy-five. And this is going to bake for about 45 minutes. Then we'll uncover it and bake it more to melt the cheese. Okay. Sounds good to me. Okay it's that time. Let's take a look. Smells good. Looks good. And the cheese is all melted on top. Mhm. Oh my goodness. Yeah it looks good. I'm hungry. Okay we are going to let this cool and then do a quick taste so we can eat dinner. Okay it's that time. Yes it is. And it is dinner time. It is. I am hungry. I know you are. I know. I'm so hungry. I can't wait to try this. Like we said it's been a really long time since we made it. But I do remember it being good. Now let's hope it stays together for ya. I hope my memory's good. Yeah. Cuz it does fail me every now and then you know. No. Oh. Looks good. Mhm. Yeah you can see all the layers in there. It's great. Yep. Turn this around. It's a little sloppy in there right now. It is. Okay. Yep. I'm going to try a little little salsa. I'm just going to put it right on this first. You go for it. And then I can adjust it from there. And of course a little sour cream. A little dollop. As I say. Don't make me sing it. Mhm. And oh. My fork. It's a thyme. Dig in honey. And now I am ready. It's still nice and warm which is good. Let's see. Yeah. I don't know why we haven't made this sooner. Yeah it's been too long I guess. Cuz it's really good. I love it. Oh great. Mhm. Yeah you definitely have to try this if you like this type of food at all. Definitely try it. All the layers that sauce is really good. Okay. Um you know there's a lot of chicken in there.
