Easy chicken dinner | Easy chicken dinner I make chicken bacon ranch enchiladas. | By Justine Kameron | Alright. So, I just put my rotisserie chicken in my Ziploc bag and now, I'm massaging it so we can get all of that meat off of those bones. This is the best hack for deboning your chicken. About like two minutes of us massaging it. It should be good to go. I'm going to bring in my big bowl. And dump it right in there. Look at all that good meat right there. Okay, let's go ahead and take those bones out. Like that the cartilage. Alright. Now, I just measured out two cups of our chicken and I'm going to bring in about 10 bacon slices that I chopped up precooked and we're putting that right with our two cups of chicken. Next, I'm going to come in with one block of cream cheese that we softened we have a packet of our ranch seasoning. This is whole packet. This is going to be such an easy and delicious dinner. I love rotisserie chicken so it is my favorite meat to use for this dinner. Next, I'm coming in with some Mexican cheese and we're going to add about half a cup of Mexican cheese in there. Okay, that looks good. I might have done a little bit of extra and then, last but certainly not least, we're going to do a dollop of daisy. Perfect. Okay. Our mixture is ready to get combined. So we have our chicken, our bacon, our cream cheese, our ranch seasoning, our Mexican cheese, and our sour cream all in our bowl mixing it well together. That rotisserie chicken smells absolutely incredible and that ranch seasoning is just going to add such a great flavor to it. Alright once your mixture is well combined we're going to come in and bring our flour tortillas. Take out my flour tortilla just like so and we are going to add a little bit of our mixture right into the center. You can kind of use the tortilla to help us out and we are going to fold those edges in just like a burrito. Fold it one more time and then roll it and then put our tortilla into our nine by 13. So, let's go ahead and finish this up. Alright, we have more that we're going to whip up together. We're just putting our mixture onto our tortilla. We're going to fold the sides. And roll. And then place that right there. So we were able to get six out of that mixture. Alright I'm going to bring in my measuring cup and then a small can of red enchilada sauce. We're going to use that whole can of enchilada sauce. Put that right into our measuring cup. And we're going to add some heavy whipping cream to our enchilada sauce. Just about one fourth of a cup. Beautiful. Now I'm going to grab my whisk and we're going to mix this together so that we get like a light orange enchilada sauce. This is just going to make this sauce extra creamy and extra delicious and it's going to go beautifully with our little chicken bacon ranch enchiladas. That looks perfect. Okay, it's time to drizzle the sauce right on there. Oh my goodness. This looks so incredible. Now remember these need to be drenched. They're supposed to be like an enchilada so do not be scarves with the sauce. You will regret it. Alright. Beautiful. Now you guys know this is not done yet. We still have some of that Mexican cheese to put on there. And we're just going to sprinkle that right on top. Get a nice little layer. Beautiful. Alright, this is ready for the oven. My oven is set to 375 and this is going to be in there for about 30 minutes. We just want that cheese to melt. Alright. These are looking incredible. They smell absolutely delicious. It is time to serve this up. I think I'm going to go over this one back here. Just kind of make sure that cheese isn't stuck on anything. Oh yeah. That looks so good. Alright. Let's cut this open and check out that middle. Chicken bacon ranch enchiladas Oh, wow. Wow. These are so good. Oh my gosh. You guys have to try this.

Get some refried beans. And we're just going to Oh yeah. Dig em out here. Come on. Because they're really wanting to stay in the can today. Come on. There we go. There we are and then just spread those around your tortillas. They'll be a little easier to spread if they're warm but this is okay. If you want to skip a step, you can just put em in straight out of the can. Once we got those evenly spread like so, grab some ground ground beef. We added some taco seasoning to this to give it that taco flavor spread that nice and evenly. Here's my little spatula. I get it. Really even. Don't want super thick parts and then some bites that don't have any love. So, just really get that spread. Looking good. Everybody getting some love there. Perfecto and we're coming in with the crunchy bits. A little tostada. Shells here. Place them. I can kind of give them a little press in here. Of beef and beans. This is going to give it really that crunchy crunchiness. I think six is good. Looks like every bite is going to get some love. So that makes me happy. I'm bringing some sour cream as our next layer. Just kind of dollop it on. Make sure evenly spread we can spread this out a little bit. Gorgeous. Beautiful. That's looking awesome. Gonna have some shredded lettuce on top of that. Let's see. This is about a half of a half of a head of iceberg lettuce. I'm going to do a little bit more. So, just about a half of a head of iceberg lettuce. I want that crunch. Can't be a crunchwrap supreme without some crunch, right? There we go. That's looking good. Smelling really good too. Some salsa is our next step. And we're just going to pour that chunky tomato salsa right over top. Get that nice and evenly spread There we go. Perfecto. Final step but most important, one of the most important for this is going to be the glue that keeps everything together is some cheddar cheese. I like to use a nice, sharp cheddar cheese but you could do mild Sprinkle this all over top. Really get it covered because this is going to be the glue to keep these tortillas in place. Perfect. And I'm going to grab couple more tortillas just for the center here. Do one two. Little press down oh yeah baby and now we're going to fold in fold in all our little tortillas Nice and neat. Fold them all in. Nice and tight. Tight as you can get. Doesn't have to be perfect but want a nice little crunch wrap supreme little case here. Feel free to give this a little extra tuck for those corners. Easy peasy. Look at that. Look at that. Okay, give it a little press down so everything sticks and then grab another sheet pan and press that on. Ha. Okay. Once that's pressed, we're going to keep these together like this and we're going to pop it into the oven at 425 for 20 minutes cooking like this with it on top. Oh, this is a heavy one. Oh my goodness. Alright, crunch up. Alright, it's been 20 minutes. So, we're ready to take this just the top one off and let the top of that. Wow. Looks so good already. Get golden brown. Five more minutes. Alright, let's take this out. Ooh. It's looking pretty good. Gorgeous. This is pretty hefty. So, you're going to have two hands. Oh it smells so good already. Mmm. Yummy. Oh I need a spatula. Let's just loosen this up from the bottom first. Pretty good. Alright. Still pretty toasty. There are cutting board. Put that over top. And then we can just three, two, one. Don't burn yourself. Oh no, I'm I'm profess Chanel. Okay, ready? Mm goodness. That is beautiful. That's like perfectly crisp. Yeah. Okay, let's Can you cut into it? Let's cut into it. Okay. That is crunch wrap. If you love the crunch wrap from Taco Bell this is a crunch wrap supporting for everybody at home. Yummy. Gonna go right down the middle. That is a crunch if I knew a crunch. This is just gorgeous. All those layers. Oh my goodness. I cannot wait to try this. Smells so good. Smell good? Okay. Lacrosse. It smells exactly like a crunch wrap. Oh my goodness. And so easy to make. I'm just going to do three like that for now. Perfect. You could cut this smaller if you wanted to but I'm just going to do the three. It's still pretty hot. It's so toasty but I have to show you these layers. Oh my goodness. It's hot. Yeah, show it actually. Look at. Wow. That looks so good. That is homemade Crunch Wrap Supreme. I'm going to go ahead and grab some ground beef that I already cooked up and we're just going to sprinkle it right on top of those Fritos. I'm making a delicious dinner for my family. It's super good. You just need a few ingredients. Pop it in the oven and it's delicious. Mm smells good, doesn't it? Mm love ground beef. Right. Well, I'm making it for you. So, hopefully you like this. Oh, thank you. Does that look like enough? Uh that looks plenty, yeah. Okay, great. So, now, we're going to go ahead and season up our dish. I do this after I cook the ground beef 'cuz I want some of that taco seasoning on the Fritos as well. Just sprinkle it. You don't need the whole bag. We use about half of this little packet. Looks perfect. And you got my favorite seasoning. Yes, it smells so good. Alright. Now, we're going to go ahead and grab some sour cream. I'm using the daisy but you can use the cheap step if you want. Get a nice scoop right on top. Flatten that out. Just spreading it to the sides. Yeah, exactly and now, we're going to do another layer of ground beef. Oh. Just a quick one. Because this didn't look full enough to me. What do you think? Yeah, I I do think having a layer of sour cream in between the meat is great. Okay. Perfect and then, finish it off with just a tad more chocolate seasoning. Okay. Great and now, you can skip this part 'cuz I know it's not everyone's favorite but I'm doing some sliced olives and we're just going to put those right on top. Totally optional but I personally love olives. Yeah, just the flavor just adds it. Yeah. Just adds a extra oomph. Alright. Now, last thing we're going to add is some Mexican shredded cheese. We're just going to sprinkle that on top and cover up the whole surface with our cheese. This is a delicious frito pie. Yeah, we're going to have that crunchy fritos on the bottom, the buttery pie crust, that seasoned ground beef, sour cream, and now the delicious cheese. Okay, just a little bit more. I love extra cheese, you know that. Yeah. Perfect. That is it. Our frito pie is ready for the oven. I have my oven set to 350 and we're going to cook it for about 40 minutes. It's super quick. Alright, this is ready. Oh, it's Smells so good. Look Right? That cheese is perfect. Okay. We gotta top this off with some lettuce though. Nice layer on top of the whole dish. Get your vegetables in there. Make it a little healthy, you know? Yeah, I tell you. I see some dark greens in there. Yeah and then, I also have some diced tomatoes that I'm going to put on top and this is just really going to add and make it taste almost like a taco. Okay. Perfect. I can't wait to see you just cut into this. I'm so excited. This is going to be so good. It smells Amazing. All that crunch from the Fritos. Yep. Make sure you cut the pie crust all the way through. Yep. Oh, those Fritos sound so good. Ooh That looks so good. See the Fritos in there? Look at that. Got this little piece that fell off. Okay. Get some tomatoes on there and let's give this a try. The pie crust is cooked perfectly. It's just falling apart. Oh oh that nice crunch of the Fritos. Mhm. Cool thing is the Fritos like keep its crunch. Yeah. It's good huh? Mm. So good.
