Beefy and Cheesy Enchiladas Ingredients: 1 lb ground beef 1 yellow onion, diced 4 oz can green chiles 2 and 1/2 cup shredded Mexican cheese 1 can(10oz) red enchilada sauce 1/2 cup sour cream 1/2 tsp salt 1/2 tsp chili powder 1/2 tsp cumin 1/2 tsp garlic powder 1/4 tsp pepper 1/4 tsp paprika 10-12 corn tortillas In a skillet, add your ground beef, diced yellow onions, and seasonings. Cook 8-10 minutes until the ground beef is no longer pink and the onions are soft. Remove the skillet from heat and add the green chiles, about 1 and 1/2 cups of the shredded Mexican cheese(reserve the rest of the cheese for topping), and the sour cream. Alright, start by adding cup of shredded Monterey Jack to a mixing bowl then add two cups of cooked shredded chicken, a pinch of salt, a pinch of pepper, and as much adobo seasoning as you want. Then mix all of this till it's beautifully combined like so. Take the whole bowl and just start filling up your tortillas. Pour some of the mixture into the middle. Roll it up like this. Roll up as many as you need to fill in a nine by thirteen baking dish and then grab a sauce pan and let's make the sauce. Three tablespoons of butter. Melt it. Whisk in three tablespoons of flour till it's nice and thick. Then add two cups of chicken breasts. Whisk that until it's smooth. Then add one cup of sour cream. Oh my. That was not supposed to happen. Let's just whisk this together and pretend like it never did. Look at that. It never happened. Grab the diced green chilies from your apron pocket. Ploop those in. I swear they're in there. They just sank. Stir those in for a minute or two and then turn the heat off. Take this whole thing. Pour it on top of your enchiladas like this just completely cover them and then cover them with some more of that Monterey Jack cheese to if you have some throw them in the oven at 350 for 20 to 25 minutes I did five minutes under the broiler to get it nice and toasty which is also why it's molten lava hot so you're probably going to need to just stare at it for a couple minutes and let it cool but once it is go ahead and cut yourself out one of these enchiladas or if you're a psycho cut two in half and just take a whole corner put it on a plate hit it with some of your favorite hot sauce if you're feeling spicy. Uh grab a fork. Cut off a bite and well put it in your mouth. Just like that. Of course it's good. I mean it ain't pretty. But it's got a great personality. It's what's inside that counts. Right?
