In this case, we're using some sugar cookie dough and a muffin tray and then, I just added a ramekin in the center of each one and that's in order to keep the divot because what we're going to do after these are baked is turn them into cheesecake. That's right. So, these go in the oven. We bake them according to the package and then, we get on the cheesecake mixture. In a stand mixer, or you can use a hand mixer in a whisk all good I got some cream cheese some sweet and condensed milk that gets whisked up just until it's combined and we're going to add some more sweetened condensed milk and keep whisking this until it becomes like a creamy and smooth mixture that we can easily spoon into the sugar cookie cups if you will now once the whole can of milk gets combined with the cream cheese I'm adding a little bit of vanilla extract and then just to add a little contrast of flavor some lemon juice now once the sugar cookies have cooked and they're cooled carefully remove the ramkins and as you could see I'm left over with those cups and then I'm just going to use an ice cream scooper for convenience and add a scoop of the cream cheese mixture to each one of these sugar cookie cups. Now, you're already seeing this looks amazing, right? I'm just going to smooth it out and the key here is to really make sure that these cool down completely or else you're going to melt the cream cheese mixture and then I'm going to add another ice cream scoop of cherry pie filling on top. If you love cherry pie and you love cherry cheesecake, this is something you 100% need to test at home. It's great for parties. It's great for birthday parties. It's good even if you just want to indulge in a really creative and path of least resistance cherry cheesecake. Now let's crack this open. Look at that. Look how good that is. Are you kidding me?
