It is so versatile and flavorful. This is the instant pot version, and I promise you’re going to want to use it for every meal. Make taco bowl out of it with veggies and add guac and salsa on top. Make a hash with barbacoa, potatoes, veggies, and a fried egg on top. So so good! BARBACOA 2.5lb chuck roast olive oil 1/2 onion 3 garlic cloves 1 tsp oregano 1/4 ground cloves 1/2 cumin 1 bay leaf 1 cup beef broth (can use chicken broth) 1/2 cup chipotle adobo 1 tsp salt Chipotle Adobo 1/2 cup tomato sauce 1/2 tsp chipotle chili powder ** this adds a smoky flavor but also some spice. If you don’t want too much spice, try 1/4 tsp 1/2 garlic powder 1/2 tsp onion powder Cut chuck roast into large chunks Turn on instant pot to sauté and add enough olive oil to coat the bottom of the pot. Add chunks and sear for about 6-8 minutes on each side until browned. While beef is browning, make the chipotle adobo by mixing all ingredient together and set aside. Add beef broth to pot and scrape off as much browned goodness as you can from the bottom and switch sauté mode off. Add the rest of the ingredients, stir, and cover. Turn on pressure cook function to high pressure. Make sure valve is closed and set to cook for 35 minutes. This barbacoa turns out to be so tender with the most delicious flavor that you will LOVE!
