Wash & peel the carrots then cut them in half horizontally then take the halves & cut them vertically in half. Put the carrot in between the chopsticks & hold them in place. Slice them evenly making sure not to slice all the way through. Repeat for all. Brush 1.5 tbsp of oil on the baking sheet then mix Parmesan cheese & seasonings in a small bowl. Evenly spread the Parmesan mixture all over the baking sheet focusing on the areas where you brushed the oil. Place the carrots on directly on top of the cheese. Mix the other 1.5 tbsp of oil with 2 tbsp of melted butter & brush all the tops/sides of the carrots. If you run out of the butter mixture just melt an additional 1 tbsp with olive oil. Place on the oven & cook for about 35-40 min or until fork tender. Grate more Parmesan cheese on top with a good handful of chopped parsley & mint. This dish is rich, gooey, packed with flavor, and really easy to make. Perfect for the upcoming holidays! Together with a fresh green salad, it’s great as a veggie centerpiece, or as a luxurious side dish alongside other foods.  Ingredients * 1 head of cabbage (about 4-5 wedges depending on pan size) * 2 onions * 200ml cream * 150ml vegetable stock (or any stock on hand) * 100g sharp cheese, like Gruyère (or a vegetarian-friendly option) * 50g crumbled blue cheese (or extra Gruyère) * A few sprigs of thyme * Salt & Pepper * Olive oil Method 1.
