More fermenting, more wonderful music. These mushrooms develop a great juicy texture as they ferment, the salt and microbes breaking down the protein for a great flavour exchange in the pan. I steamed them before fermenting to help preserve their texture (sometimes mushrooms become mush as they ferment). Then added garlic scapes, ginger root, and dried juniper berries to infuse. 

I see a lot of fermenting recipes but not so much advice for what to do once you’ve made the ferment. This recipe pairs the umami-rich, acidic mushrooms with (plantbased) cream to balance the flavours. I smuggled in some horseradish and mustard too for some nose tingling AROMA.

This umami bomb is a secret weapon in my kitchen. My friends jokingly know it as natural MSG but it’s more akin to crack for foodies. Think soy sauce but WAY easier to make. It transforms fatty dishes with savoury depth and aroma, turns carbs like rice, pasta and potato extra creamy, and enhances lively acidic meals like tomato in a pinch.
