Start by seasoning your chicken breast however you like, but season them well. Add a bit of evoo to your pan and heat on medium. Add your chicken, do not move it, let it cook for 5 minutes, set your timer. After 5 minutes, flip it,, add about a cup of water and cover. Leave the heat on for 2 minutes (4 minutes if the pan is thin and chicken is larger) turn the heat off and let sit for 15 minutes.
