Grab 4 skin-on bone-in chicken thighs, dab them dry with a paper towel and add them on top of the sliced onions in the oven-safe dish. Let chicken come up to room temp while you work the sauce in the next step. 3. For the sauce paste, grab a medium mixing bowl. Add the juice of 1 large lemon, 2 tbsp tomato paste, 2 tbsp olive oil, a couple generous pinches salt, pepper, 1 tbsp sweet paprika, 1 tbsp garlic powder, 1/2 tbsp oregano, 1 tbsp sumac. Mix really well. 4. Brush the sauce paste all over the chicken, covering all sides. Reserve some of it for later. 5. Put the chicken in for an initial 35 minute visit in the

So about three ounces. Stir this to together. Alright, we're going to add this mixture to those slits in the chicken. So, I'm making this super simple. Just a few ingredients. So, I'm going to take a spoonful and I'm going to add it to each of these slits. Just a couple more on this one and then I'm going to do. Same thing with that second. Right, I'm just going to turn this around. Doing the exact same thing with this one. Opening up that slit and adding those ingredients right inside of this. Super easy. You definitely can do this part ahead of time. Put it in the fridge until you're ready to put it in the oven. And the next thing I'm going to bring in is my olive oil. I'm just going to drizzle right on top of both of those chicken breast. And then I'm choosing to come in with some oregano. Just some dried oregano this time. Kinda pulls together the flavors of the tomatoes and our chicken. Again we want to do that pepper. And we want some salt. Just a little bit on our chicken. Okay one more thing. My husband and I love cheese. So I'm just going to add just a tiny bit of mozzarella right on top. Alright I'm just going to remove this for a second and then I'm going to bring in those Hasselback chicken breast and add them right on top. I have my oven set at 400 degrees. This is only going to cook for about 30 minutes or so until that chicken is done. I can't wait for you to see what it's going to look like. Alright. Lightly coat chicken in gluten free flour on both sides. Add avocado oil to a pan over medium heat, and brown chicken on both sides to develop some good flavor. Remove the chicken from the pan, and add a touch more oil if the pan is dry. Add onion and garlic and cook 3-4 minutes. Add corn and hatch chilies and cook an additional 3-4 minutes. Add lime zest and juice, and scrape up all the brown parts from the bottom of the pan! This is all flavor! Add chicken stock, and allow the mixture to reduce to au sec (until nearly all the liquid is evaporated). Add heavy cream and reduce heat to medium low and allow to simmer for 2-3 minutes to weaken up all those flavors. Season with salt and pepper! Add chicken back to the pan, nestle down in that sauce, top with Queso cheese, and bake in the oven for 12-15 minutes at 350 degrees until chicken is fully cooked to 165 degrees. Remove from the oven, and top with your favorite toppings! Southwest Seasoning Garlic Chili Powder Smoked Paprika Cumin Salt Pepper Mix all of this together, and store in airtight container until ready to use!
