Okay ngl I didn't think these would turn out so damn nice the first time round, but here we are. Either I got possessed by the spirit of my noodle-making Chinese ancestors, or they're actually surprisingly pretty easy to make. 💁🏻‍♂️ 

I think it's the latter, and I've got the exact recipe here:
500g Russet potatoes (unpeeled weight)
1/2 tsp salt
260g (~3 cups) potato starch
160ml (2/3 cups) water, plus more to adjust

*for the sauce*
1/2 white onion, minced
2 garlic cloves, minced
1 stalk spring onion, thinly sliced
5g chilli flakes
30ml (2 tbsp) light soy sauce
15ml (1 tbsp) black vinegar, or another dark vinegar
30ml (2 tbsp) Lao Gan Ma
5g granulated sugar
1g salt
60ml smoking hot oil
