I love them because they are only 5 ingredients and come together in just 5 minutes.  I usually have my slow cooker chicken on hand for these but wanted to show you how store bought shredded chicken breast makes this even easier for you.   They’re not the prettiest meal, but I made them and had it for dinner and am saving the rest for lunches the next few days. You can just heat and eat and it’s like you’re hving a fiesta in minutes.  Feel free to add in veggies to yours if you want.  I often throw in shredded zucchini or cauliflower rice to mine. These are packed full of flavour and so easy to make!! Perfect for meal prep and a great way to mix it up 🤤 

Ingredients (for 1 serving):
125g x Extra lean beef mince
2 x Mini flour tortilla (old El Paso)
1/2 cup x Enchilada sauce (old El Paso)
50g x refried beans (old El Paso)
30g x Greek yoghurt 
20g x mozzarella 
1/2 cup x diced capsicum
1/2 cup x corn kernels 
Taco seasoning 

Optional toppings:
Avocado and fresh lime

Method:
1. In a pan cook your beef mince with the taco seasoning and set aside. 
2. In your container add 1/4 cup of the enchilada sauce. Place a tortilla on top. Top with half of the refried beans and spread it out. Top with half of the capsicum and corn.
