I have found that between 116-118C is just about perfect. If you want a drippy sauce for cakes or to make lattes then after adding the cream and butter, stir together and then immediately take off the stove. The amount of water in the caramel sauce determines how chewy they will be therefore if you cook it down and you find it’s too hard (chewy) then warm a tablespoon of cream and add to the caramel and it will soften it. Here is my recipe: 1/2 C Water 1 1/4C Corn syrup 2 1/4C Sugar 1 1/2 C 35% Cream 1/2 C Butter 1 tsp Vanilla Put the water in a heavy bottom pan first then add the corn syrup and sugar evenly over the top. Wipe down the edge of the pan to take away any sugar crystals if needed. Without stirring bring the temperature up to 155C. Turn off the burner and add the warmed cream slowly being careful to avoid the rising steam. Add the butter and put back on medium heat and bring up to 116C stirring occasionally so the bottom doesn’t burn. Take off the burner and add the vanilla stirring well after.
