You can add any other veggies you would like too. 2. In a large bowl whisk 1 egg with about 1/3 cups of chicken broth. Now add about 7 slices of crusty stale bread chopped into cubes. If you don’t have any stale bread you can throw some in the oven at 350 for 5-10 minutes until a bit toasty. 3. Add the sautéed veggies to the bread mixture. Also add about 1/2 cup of chopped parsley and a couple Tbsps each of rosemary chopped and sage chopped. Then add some pepper. Mix well. 4. If the mixture is too dry add some more broth. Then roll into 2 inch balls and place on a cookie sheet. 5. Bake at 400 degrees for 20-25 minutes. 6. Enjoy!!! | Andrea

Start by boiling Yukon gold potatoes with lots of salt and some baking soda until they're super soft. Meanwhile, crisp up some garlic, thyme, and rosemary and olive oil to infuse it with flavor. Once they're nice and crispy, remove from the oil but keep the oil hot. When the potatoes are done boiling, drain and then shake in a colander to create a thin mashed layer on the outside of each potato. Transfer to a baking sheet and toss in the olive oil and place in a 400 degree oven for about an hour. When all sides are crispy, toss them in flaky salt and the chopped garlic and herbs from earlier. These are unbelievably crisp on the outside and insanely fluffy and soft on the inside.
