I’m not sure I can ever go back to regular banana splits now that I’ve had this flaky puff pastry version filled with warm chocolate hazelnut spread and fresh raspberries. I topped them with powdered sugar, chocolate drizzle, ice cream, and strawberries. YUM!! And to make it extra special for Valentine’s Day or a Galentine’s party I cut the strawberries into heart shapes. But you can top yours however you like best like with whipped cream, nuts, chocolate chips, cherries (we couldn’t find fresh cherries), or any of your other favorite banana split toppings. I shared the pastry method here too - it does take a little practice so I gave you a bigger portion than is needed for this tray - an 8x13 inch tray. Pay attention to the prepping of the tray so this doesn’t stick. This is so worth the effort. I promise. I’m away! Prep for work for the morning! Ingredients * 250 gms very cold butter * 250 gms plain flour *100 mls very cold water Extra butter and flour for lining tray and for rolling pastry. * 200 gms shop bought raspberry jam Topping * 230 gms melted cool butter * 230 gms ground almonds * 180 gms icing sugar * 3 large eggs * 1 tsp each vanilla and almond extract Method See video for pastry. Leave to cool in the fridge for half an hour. Twenty minutes on preheat oven to 180°C fan Add all the topping ingredients into a bowl - butter, almonds, sugar, eggs, extracts. Mix well. Take out the pastry. Spread the jam carefully on it - make sure you don’t tear the pastry. Top with the almond mix and make sure none of the jam is showing. Bake for 30 minutes, a little longer if you prefer a darker finish. This is a beaut dessert choice for Christmas! 500g/ 2 cups cream cheese @waitrose 270ml / 1 cup double/ heavy cream 300g / 1.2 cups white chocolate 300g / 3 cups biscuits 130g / 1/2 cup unsalted butter Blackberry compote: 150g / 3/4 cup blackberries 2 tbsp water 3 tbsp sugar 2-3 tbsp desiccated coconut Crush the biscuits into a fine crumb then add the melted butter and mix. Press into a deep 8-inch baking tin with a removable bottom. Melt your white chocolate and set aside (we will use this when still melted but room temp, not hot). In a standing mixer, whip the double cream until soft peaks. Then add the cream cheese and mix together before adding the room temp chocolate. Whisk until all combined. Add the filling to the the baking tin and even it out with a spatula, leaving little nooks for the compote. Leave to chill for a minimum of 5 hours in the fridge. I like to leave mine overnight. When ready to serve, make your compote by adding your blackberries, water and sugar to a pan and place on a medium heat. Squish the berries down and stir for around 5 minutes, until your desired consistency forms. Add more water to thin if needed. It will also solidify more when you remove from heat. Add some compote all over the cheesecake and sprinkle some desiccated coconut on the edges. Serve!
